Tropical Carrot Cake
TROPICAL CARROT CAKE
American style carrot cake is probably my favourite. Specially in the cheesecake version that you can find at the Cheesecake Factory which is just mouth-watering.
I chose to make it for my birthday, to cheer me up after the worst birthday ever. The story is too long to tell, specially without explaining too many things so I'll just skip it and jump right to this wonderful cake. I was very happy with the result expect for the frosting which wasn't thick enough to pipe it with the piping bag and it looks a little runny but it was just for us and i was tired that day. The cake was awesome and that's all it mattered. We really loved it and it helped making my day a little less shitty.

Torta morbida alle fragole
For me the best way to eat fruits is to eat it raw, just the way it is. Specially strawberries, that I don't like in smoothies, or shakes, or gelato. Not at all. So I wasn't really sure about this cake, but after reading what she wrote about it made me wanna try it. So glad I did. Both my man and I enjoyed it a lot, it was gone in less than 24 hours. And he dislike cooked fruit, because it's 'mushy like mushrooms'. That's the way he put it. Whatever...
Anyway, this is the recipe! Sweet but absolutely not too sweet, light but yummy, very moist and… maybe not really beautiful (the man defined it as 'the ugliest cake ever', but I think it's a little exaggerated), but surely worth it!
Ingredients for a 9" round pan:
85 g butter
180 g flour
1 ½ tsp baking powder
½ tsp salt
150 g sugar
1 egg
125 ml milk
1 tsp vanilla extract
340 g strawberries
2 Tbsp sugar
Beat butter and sugar with an electric mixer for 3 minutes. Still beating, add milk and the egg. Add salt and vanilla. Reduce the speed to minimum and add flour and baking powder. Pour the batter into the greased pan and bake at 350°F for 10 minutes, then reduce oven temperature to 320°F and bake for 50-60 minutes. Let cool and serve.

Pecan Pie
PECAN PIE
I'm still trying to get used to America, and it's been more difficult than I expected. Specially in the kitchen. I can't find easily some ingredients that in Italy I used to use every day, or if I find them , they are not the same and they are expensive.
So I thought it was better to start baking some american staff! i can finally find all I need and couldn't find in Italy. I also needed to test the oven, which is quite basics, but it turned out to work way better than I expected. This pie came out perfect.
Ingredients for a 9" pie pan
For the crust:
1 ¼ cup AP flour
½ tsp salt
1 Tbsp granulated white sugar
½ cup unsalted butter, chilled and cut into 1 inch pieces
⅛ to ¼ ice water
For the filling:
1 cup dark brown sugar
⅔ cup maple syrup
1 Tbsp vanilla extract
4 Tbsp butter
3 large eggs
¼ tsp salt
1 ½ - 2 cups of pecans, toasted and coarsely chopped
* To toast pecans, place them on a baking sheet and bake for about 8-10 minutes in a 350 F oven until fragrant. When you can smell them in your kitchen, they'll be ready. Until until they are cool to coarsely chop them.
Above i wrote the recipe with my modification. For the procedure and the original recipe, go here.

Apple Tarte cremosa
vaniglia in polvere
cannella
per la decorazione:
2 mele
zucchero di canna
cannella
burro
A me è piaciuta soprattutto tiepida… Madddooooooooo che goduria!!!
APPLE CREAMY TARTE
Since my father never gives compliments but complains a lot, when he said this tarte was really good and I did a good job, I had to make it again. Since I like to try new recipes and I had a few I wanted to try, I thought to make another Apple Tarte, following a different recipe. He probably won't even notice…
This is where I got it. I mixed these two: this one, and this one.
Ingredients for a 9" pan:
for the frolla dough:
250 g flour
100 g butter
40 g granulated white sugar
vanilla
1 egg
a pinch of salt
1 Tbsp ice water (only if needed)
for the apples compote:
4 medium size apples
½ orange or lemon (lemon is better, I didn't have it)
50 g sugar
2 Tbsp apricot jam
cinnamon
vanilla
for decoration:
2 apples
brown sugar (I mean cane sugar)
cinnamon
butter, melted
Make the dough by mixing the flour, the salt, the sugar and vanilla. Add the butter cut in pieces, then the egg, beaten. Make a ball and store in the fridge for half an hour, wrapped in cling film.
Cut the apples in small pieces, put them in a pan with thick and heavy bottom, add the sugar and the lemon juice and cover. Cook at low heat for 25 minutes. When they are soft take off the lid and increase the heat. They need to dry up and caramelise a little. Switch it off and let cool. Once cooled, add the jam, the vanilla powder and the cinnamon as you like.
Roll out the dough and cover the greased baking pan, pour the apple compote inside.
Cover the compote with the 2 apples, sliced thinly and disposed nicely all around.
Brush with a little melted butter and sprinkle with some cane sugar mixed with cinnamon. In the oven at 390F for 10 minutes (heat from the bottom), then decrease to 340F and bake until the edges are golden.
Brush with some more butter and bake in the oven with the grill on, for a few minutes, until the apples start to get dark.
I loved it warm… Up to you but it's good in any way. Perfect for a winter cold afternoon, when outside gets dark too early and we need some comfort food to cheer us up.
