Torta Granotta (grano più ricotta) ;););) anche detta 'Torta degli avanzi di Pasqua'

Ormai Pasqua è passata da un pezzo, ma se come me avete ancora ingredienti avanzati dalla preparazione della pastiera o simili (grano cotto, canditi), e siete stanchi di vederveli lí ad aspettare, ma non avete voglia di fare un'altra pastiera, questa torta farà per voi!




Mi è uscita cosí, proprio per levarmi di torno quel grano avanzato prima che il Professor Bear me lo imponesse con la forza (ha le manie di sbarazzarsi della roba... è dura conviverci per una che vorrebbe tenere tutto "nel caso che... un giorno chissà... mi potrebbe servire...."), così l'ho battuto sul tempo. Approfittando del fatto che ho preparato cena presto e il nostro coinquilino andava al supermercato mi sono fatta portare ricotta e uova e mi sono messa all'opera.
La torta che volevo era una torta di ricotta che però utilizzasse anche il grano e i canditi avanzati. E così ho mischiato le due cose... Il risultato? Beh... il profumo è divino. Il sapore... Questa dovete proprio farla. Non ve ne abbiamo lasciata neanche una fettina!

Note:

- Questa non è sicuramente una torta bella da vedere. Io l'ho ricoperta di zucchero a velo ma l'ha assorbito in pochi secondi, quindi non è un'opzione valida se volete renderla più appetibile. Ho pensato solo dopo che la decorazione perfetta qui sarebbe un po' di frutta 'brinata' sistemata artisticamente al centro della torta. Appena la rifaccio (perché la rifaccio, oooohhh se la rifaccio!), se trovo i canditi, provo e posto le nuove foto. per ora accontentatevi della sua bontà.

Ingredienti (per una tortiera da 23-24cm):

4 uova
200 g zucchero
1 pizzico di sale
500 g ricotta
250 g grano cotto
¾ cucchiaino di cannella in polvere
150 g latte 
scorza d'arancia
canditi (io ho usato quelli che mi erano rimasti dalla preparazione della pastiera... forse 50g?)

In un pentolino mettete il grano col latte, la cannella e una bella grattata di scorza d'arancia (va a gusti, a me piace quindi ne ho usata una intera), e fate andare a fuoco lento perché il grano si insaporisca. Il colore sarà bruttino, un marroncino rossastro che francamente non volevo per la mia torta, ma poi si sistema, quindi non preoccupatevi. Anche l'odore di cannella sembrava troppo forte invece poi è perfetto mischiato col resto degli ingredienti.
Fate raffreddare.


In una ciotolina sbattete 2 albumi con un pizzico di sale, a neve ferma, poi mettete in frigo mentre...
in un'altra ciotola capiente sbattete 2 uova intere più i 2 tuorli rimasti con lo zucchero fino a che diventano molto palline e spumose, allora aggiungete la ricotta e sbattete di nuovo (io ho usato fruste elettriche per questa torta). Aggiungete il misto di grano e amalgamate con delicatezza con una spatola. Aggiungete per ultimo gli albumi montati e amalgamate senza smontare la massa.

Rovesciate in una tortiera oliata e cosparsa di pangrattato o rivestita di carta forno e cuocete in forno già caldo 180°C per 60 minuti (vale prova stecchino o di scuotitura=se la scuotete un pochino il centro dev'essere abbastanza fermo).
Lasciate raffreddare completamente la torta prima di sformarla.

Decorate con zucchero a velo.


Ho adorato questa torta e ho perso il controllo, nel senso che ne ho mangiate fette intere, in piedi, velocemente, e appena una fetta finiva me ne tagliavo un'altra. Il Mister invece non ne è rimasto colpito quanto me, così come non capiva il nostro entusiasmo per la pastiera. diciamo che, se non vi piace la pastiera, forse dovete lasciar perdere questa torta, perché come sapore siamo lí. Ne ho portato un pezzo alla mia collega bielorussa, per avere una terza opinione, e mi ha detto che è favolosa, e una delle torte più buone che abbia mai mangiato. L'idea poi che si possa fare anche gluten-free (sostituendo il grano col riso), l'ha mandata in estasi. Il fatto che questa torta me la sia inventata, mi ha resa ai suoi occhi un idolo da adorare.

Con una recensione così, a me, francamente,  dell'opinione del Mister importa ben poco!





'GRANOTTA' CAKE (GRANO+RICOTTA=WHEAT+RICOTTA CHEESE)
also called "Easter leftovers cake"

The typical italian cake at Easter is 'pastiera napoletana', a cake made with ricotta, wheat, and candied orange peel in a shell of pasta frolla. It's a moist, delicate cake which send you to heaven at every bite. I have my own recipe for it, you can check it out here.


I made it for Easter and now I still have some leftovers to get rid of before my better half starts complaining that we have 'too much stuff'.
So I had to come up with something new. I wanted a moist, ricotta based cake, with no crust (it was late, I wanted something simple and quick), with my leftover wheat and candied citrus peel.

And here you have it!


Notes:

- This is not a pretty cake. Poor thing, it's so moist that even the powdered sugar sprinkled on top to make it pretty is absorbed right away! I thought (when the cake was already gone) that the best decoration for this cake is probably some small fruit at the centre, glaze with a syrup and rolled in sugar for a 'frosty effect'. Next time I'll try that and post updated photos. For this time, you've got to trust me and be happy with the its awesomeness despite of its bad looking.

Ingredients (for a 9" cake pan):

250 g cooked wheat (like this)
150 g milk (2% is fine)
¾ tsp cinnamon
the zest of an orange
500 g ricotta cheese
4 eggs
a pinch of salt
200 g sugar
about 50 g diced candied citrus peel

Start by cooking the wheat with the milk, cinnamon and the orange zest, at low heat, for 10 minutes. Let it cool.

Beat 2 egg whites (from your 4 eggs) with a pinch of salt until stiff picks form. Put in the fridge while you...
beat 2 whole eggs and the 2 yolks left with the sugar until fluffy and very light in color. Add the ricotta and beat again (I used a hand mixer for this), then add the wheat mixture and fold it it with a rubber spatula. Add the egg whites and fold them in. It will smell delicious.


Oil your pan and sprinkle it with breadcrumbs or just cover it with parchment paper. Pour the batter and bake at 350°F for 60 minutes or until the centre is firm when you shake the pan.
Let cool completely before removing from the pan.
You can store it in the fridge for a very cool treat anytime in the day! You don't need anything to accompany this cake, which is more of a dessert, I'd say. It's so wet that anything else is unnecessary.


I am in LOVE with this cake. I was already in love with pastiera napoletana, but this one is so faster and easier to make, and it's flourless!!! And it's more moist. It's wet, actually. The Mister of the house was not as impressed, as he wash;t of the pastiera itself. I guess you'll love this cake if you like this kind of flavour, otherwise you won't. I brought a slice to my coworker from Belarus, and she said it was fabulous, one of the best cake she's ever had!!! That I'm the best and she adores me. Honestly, with this kind of review, I don't care that much of what my man thinks!!! ;)
