Panini alle olive

Ricetta da postare da due anni, dico due… Presa dal bellissimo blog di Sara, panini buonissimi e super morbidi, sia da soli che farciti. Perfetti da portare a un picnic, sulla spiaggia, o da mangiare a tavola. A merenda, per uno spuntino, da noi sono spariti subito!


Ingredienti:
500 g farina 00
200 g olive
200 ml latte
100 ml acqua
30 ml olio
15 g sale
20 g zucchero
1 cubetto di lievito di birra / 1 bustina di Mastrofornaio

Fate la fontana nella farina, rovesciateci dentro l'olio, lo zucchero, il lievito sciolto nel latte tiepido, l'acqua, il sale e mescolare (o, se usate il Mastrofornaio, mischiatelo alla farina con lo zucchero) fino a formare una palla. Copritela e lasciatela lievitare un'oretta in un posto riparato. Sgonfiare la palla, formare i panini, sistemateli sulla placca da forno e lasciateli lievitare coperti un'altra mezz'ora. Infornate a 200 °C per circa 20 minuti.



OLIVE BREADS

Ingredients:
500 g flour (AP)
200 g green olives, pitted
200 ml milk
100 ml water
30 ml olive oil
15 g salt
20 g sugar
1 dice of fresh yeast / 16 g dry yeast *

*I've never tried this recipe with american dry yeast, I've used the italian brand Mastrofornaio, which doesn't need to be dissolved in water, just mixed with the flour and some sugar. I noticed that the american one works differently, so i'm not sure it will come out the way it should. If someone tries, please let me know!

Put the flour on the counter and make a hole in the middle. pour in the hole the oil, the sugar, the fresh yeast dissolved into the warm milk, and the salt (if you use the dry yeast Mastrofornaio, mix it with the flour and the sugar), and start mix everything until you can form a ball. Cover it up and let it rest for half an hour.
Punch the ball, divide it into 6 small breads, place them on a baking sheet covered with parchment paper and let them rest for half an hour, covered. Bake at 392°F for about 20 minutes.

Gelato Cake

Giusto per confermare tutto quanto affermato qui, ecco un'altra sua ricetta. Quando l'ho letta l'ho trovata assurda, esageratamente impossibile, e poi come al solito mi son detta "Che ti aspetta dall'Araba? Se funziona….". E poi a pensarci nel gelato ci sono uova, crema, latte, zucchero…. quindi ad aggiungerci farina e lievito come fa a NON uscirci una torta? 
A me il gelato piace sotto forma di gelato, però non ho resistito alla tentazione di provare, anche solo per la soddisfazione di vedere la faccia incredula del Professore quando gli ho detto che avrei cotto il gelato in forno…! Impagabile… ;)






Ingredienti:
500 g gelato/ice cream
180 g farina
2 cucchiaini lievito per dolci
* Io ovviamente ho dovuto 'porcheggiarlo' un po' e non contenta ci ho aggiunto pure delle gocce di cioccolato… A voi la scelta, ma non compaiono nella ricetta originale. 
Note:
- Scegliete un gelato BUONO, perché darà al plumcake il suo sapore. Io ho optato per una bella e buona porcata, ma di classe: un bel Caramel Praline che era la fine del mondo! Ho preso la scatola da 1 Kg e non me ne sono affatto pentita.
Fate ammorbidire il gelato senza però farlo sciogliere completamente, uniteci la farina e il lievito e rimestate con una spatola. Versate in uno stampo da plumcake non troppo grande (o aumentate leggermente le dosi… a me è uscito bassino) rivestito di carta forno e cuocete in forno pre-riscaldato a 180°C per circa 45 minuti.

È lievitato davvero…! Ed emanava un buon profumo di praline, tanto che non sono riuscita ad aspettare che si raffreddasse per tagliarmene una fetta. 
Opinioni personali? Non il plumcake migliore che ho assaggiato, mi è persino uscito bassino quindi non era neanche bello… Però piacevole e per niente stucchevole.
Ero lí a papparmi la prima fetta quando mi sono resa conto che avevo ancora mezza scatola di gelato in freezer…. così l'ho preso e ce ne ho piazzato una bella cucchiaiata sopra la seconda fetta. Una vera bontà! E così son passata alle terza fetta, mentre la quarta l'ho portata al Professore che mi aspettava per un film. 
Insomma io penso che questo plumcake sia perfetto accompagnato dallo stesso gelato di cui è fatto. L'ice-cream da solo manca di consistenza, a meno che non se ne mangi molto, e il plumcake manca di qualcosa di fresco e cremoso. Se li si mette insieme si ottiene la perfezione per una merenda, una colazione, o un dopocena coccoloso.

GELATO CAKE
I know it sounds impossible, ridiculous even writing it, but it is true: this cake is made of gelato, baked. Still skeptical? Well, so was I, but who posted is someone whose recipes are usually successful, and she got it from Taste of Home, so… let's give it a try! Because, if you think about it, the ice-cream is made of eggs, cream, milk, so if you just add flour and baking powder, why shouldn't you get a cake? Make sense huh? Anyway, I had to try it myself so I went to Publix and got the yummiest ice cream I could find. A limited edition! I gotta admit, I got the 2 lb box and I ate half of it the way it was… Veeeery veeeery good! And I'm not an ice-cream fan, I'm all for gelato, it's waaaay better. But this was YUMMY!!!! I had to force myself to stop otherwise I wouldn't have left any for the cake ;P.



Ingredients:
500 g creamy ice-cream/gelato
180 g flour
2 tsp baking powder
Let the gelato soften a bit, but don't let it melt. Add the flour and the baking powder and mix with a spatula. Pour into a loaf pan covered with parchment paper and bake in a pre-heated oven at 350°F for about 45 minutes.



Check the doneness with a toothpick after 40 minutes and do not overcook.
I was so curious to trying it that I cut myself a slice when it was still hot. Well, it wasn't the best cake I've had in my life, but it was nice. Very happy about the ice-cream flavour, just wishing they put more praline s in it :). What made it really special and a real treat was adding a scoop of the same ice-cream on top of the slice… It really made the difference. It was so yummy I had other 2 slices.
So I highly recommend pairing the two things together to have a very nice dessert.

Torta di pane e pomodorini

Altra ricetta vecchiotta, pian piano sto facendo pulizia nell'archivio e cercando di postare tutto ciò che è pronto ma ancora in attesa di essere mandato sul blog.
Ricetta perfetta per un buffet, un picnic, una merenda all'aperto o anche da servire in tavola, vi libera in maniera gustosa e originale di tutto il pane raffermo che avete in casa.

Ingredienti:
200 g di pane raffermo
300 ml latte
150 g olive verdi snocciolate
2 uova
1 confezione grande di tonno sott'olio
6 pomodorini
olio evo
sale

Scaldate il latte e spezzettate il pane in una ciotola. Irroratelo col latte caldo e lasciatelo riposare per un'oretta. Mettete nel mixer il pane col sale e le uova e frullate fino a ottenere un composto omogeneo. Trasferitelo in una ciotola e unitevi il tonno sbriciolato e le olive. Rovesciate tutto in una stampo di 18 cm rivestito di carta forno, livellate bene la superficie e disponetevi sopra i pomodorini tagliati a metà, schiacciandoli leggermente per farli affondare un pochino.



Cuocete a 200°C per 40 minuti, dopodiché spennellate la superficie con abbondante olio e proseguite la cottura opre altri 5-6 minuti. Fate intiepidire e servite tagliata a quadrotti.

OLD BREAD AND TOMATOES CAKE
This is a tasty solution to get rid of some of the old bread that you might have at home and don't know what to do with it but throwing it away. Well, hold on!
This is also perfect to bring to a buffet, a picnic, for a children or adult birthday party, or to serve as an appetiser or finger food at a lunch or dinner. Or to munch in front of a game on TV. 
One tasty way to kill two birds with one stone :)
Ingredients:
200 g old hard bread
300 ml milk
150 g green olives, seedless
2 eggs
1 big can of tuna in olive oil
6 cherry tomatoes
salt
extravirgin olive oil

Heat the milk and cut the bread into small pieces. Pour the hot milk over it and let it rest in the bowl for an hour. Put the bread in a mixer with salt and the eggs and mix everything until you get a creamy mixture. Trasfer it to a bowl and add the tuna, crumbled, and the olives. Stir and transfer into a 7" squared pan. Smooth the surface to make it even, then place the tomatoes, cut in halves.
Bake at 390°F for 40 minutes, then brush the surface with olive oil and bake for another 5-6 minutes. Let cool down and serve cut in squares.

Ciambellone alle patate dolci con uvetta e rum

Ci sono certi libri che pochi conoscono, e di solito ti capitano tra le mani per caso. E sono scorrevoli, piacevoli alla lettura, e parlano di ricette e torte fantastiche e solo a leggerne la descrizione ti viene una voglia e ti chiedi come farai a resistere senza mai assaggiare quella torta e... sorpresa!!! A fondo libro trovi tutte le ricette citate! E a quel punto non puoi far altro che andare a comprare quel che ti serve e farla. Così è successo a me con questa torta, che ho trovato nel libro "Eat cake!". Veniva descritta in termini entusiastici ed è stata la prima che ho voluto riprodurre, sebbene utilizzasse un ingrediente che per me è assolutamente off-limits nei dolci: il rum. Non sono astemia ma l'alcol nei dolci non mi piace, per me rovina tutto. Non mi giudicate male vi prego, sono gusti!

Ma mi sono ricreduta dopo questa torta, che a dir la verità è buona, sí, ma non da far resuscitare i morti, insomma… Quello che i morti non solo li fa resuscitare, ma li fa danzare bellamente sulle mani, è la salsa. Da fare in dose doppia, perché non è mai abbastanza, soprattutto se ve ne concederete una leccata di cucchiaio tutte le volte che passerete dalla cucina. Un sapore di praline che vi farà chiudere gli occhi ed esclamare "Oh-MY-GOD!" e vi darà assuefazione. Il rum non si sente quasi per niente, e PER NULLA nella torta.

Fatela, se siete aperti a dolci diversi, o se avete ospiti stranieri. Altrimenti fate quintali di salsa e rovesciatela su ogni dolce che farete d'ora in poi….. ;)

Sweet Potatoes Bundt Cake 2

Ricetta tratta da In the Sweet Kitchen by Regan Daley, trascritta su "Eat Cake!" by Jeanne Ray

Ingredienti:

¾ cup uvetta sultanina

½ cup dark rum (io golden)

2 patate dolci grandi o 3 medie

4 uova grandi

2 cups di zucchero

1 cup di olio di semi

2 cucchiaini di estratto di vaniglia

3 cups farina

1 cucchiaino lievito per dolci

1 cucchiaino bicarbonato di sodio

½ cucchiaino sale

1 ½ cucchiaino di cannella

½ cucchiaino di noce moscata

¾ cup buttermilk *

per la glassa: (consiglio vivamente di raddoppiare le dosi per il vostro bene)

½ cup zucchero di canna scuro

4 cucchiai di burro

3 cucchiai panna da montare

il rum rimasto dalla macerazione dell'uvetta

 

*per fare il buttermilk, mischiate 2 cucchiai di latte con tanto yogurt bianco quanto vi serve per arrivare a una cup. Usate quel che vi serve. Oppure, mischiate ¼ cup di latte con ¾ cup di yogurt bianco.


Imburrate e infarinate lo stampo da ciambellone.

Lasciate macerare l'uvetta nel rum per almeno mezz'ora. Intanto pelate le patate e tagliatele a metà e poi a fette di 10 cm, e mettetele in una pentola di acqua fredda salata, coprite e portate a bollore. Abbassate la fiamma e lasciate cuocete fino a che le patate saranno tenere e le potrete punzecchiare con la forchetta. Scolatele e lasciatele asciugare 2 minuti prima di ridurle a purea con uno schiacciapatate. Prendetene 2 cups e lasciatele da parte a raffreddare. 

Sbattete le uova leggermente, poi unite lo zucchero e sbattete fino a che diventano pallide e spumose, unite l'olio e la vanilla.

Scolate l'uvetta e NON BUTTATE VIA il rum. Aggiungetene ¼ cup al composto di uova, poi unitevi anche le patate e mischiate il tutto.

In un'altra ciotola mischiate la farina col sale, la cannella, la noce moscata, il bicarbonato e il lievito. 

Unite la farina al composto in 3 volte, alternandola con il buttermilk. Iniziate e terminate con la farina. Unite l'uvetta al composto, date una rimestata e rovesciate nello stampo.

Cuocete nel forno caldo 180°C per 1 ora- 1 ora e 20, controllando la cottura con uno stecchino che dovrà uscire asciutto. Non cuocetela troppo altrimenti risulterà asciutta e non bella umida come dovrebbe.

Lasciate raffreddare ponendo lo tampo su una griglia, poi rovesciate la torta sulla griglia posizionando una placca da forno sotto la griglia stessa.

Durante i 10 minuti preparate la glassa unendo tutti gli ingredienti tranne il rum in un pentolino dal fondo spesso e portando a bollore fino allo scioglimento dello zucchero. Cuocete fino a che comincerà ad addensarsi leggermente. Togliete dal fuoco, unite il rum rimasto e mescolate. 

Usate uno spiedino per fare buchi su tutta la torta, specialmente sulla parte alta, poi con un cucchiaio versateci sopra metà della glassa. Lasciate raffreddare e addensare leggermente l'altra metà, poi rovesciatecela sopra, lasciandola colare sui bordi. Non dovete dimenticarvi la teglia salvagocce sotto la grata perché non dovete perderne nemmeno un po'.

This cake was described as food of gods in Heaven and I just couldn't live anymore without trying it. Honestly, it is pretty good, but I've had better. What really hit me, was the glaze. THAT, it's food from Heaven. I would eat it with a spoon, with a paddle, I would lick the plate with no shame. I would put it EVERYWHERE. Trust me. The rum is there? Really? I could not say…. But yes there is!  But doesn't bother me at all :)

Suggestion: Make double batch of the sauce. You'll need it.

I know, I'm a lazy ass. But what's the point in copying word by word when there are easier and faster ways? Here, photo of the book itself. And photos of the result after I made it :)

Sweet Potatoes Bundt Cake 3

Ingredients:

¾ cup golden raisins (I used the dark ones)

½ cup dark rum (I used golden)

2 large or 3 medium-sexed sweet potatoes

4 large eggs

2 cups granulated sugar

1 cup mild flavored vegetable oil

2 tsp pure vanilla extract

3 cups AP flour

1 tsp baking powder

1 tsp baking soda

½ tsp salt

1 ½ tsp cinnamon

½ tsp nutmeg

¾ cup buttermilk

 

for the glaze:

½ tightly packed dark brown sugar

4Tbsp unsalted butter

3 Tbsp whipping cream

remaining rum macerating liquid from raisins
