Finta sfoglia

Ho provato questa ricetta per realizzarne un'altra della stessa fonte. Ero curiosa di vedere se avrebbe sfogliato davvero e eccitata all'idea di non dover usare tutto il burro che la vera pasta sfoglia richiede. 
Ricetta presa dall'Araba, che a sua volta l'ha presa da Adriano. Io ho realizzato la versione salata del Nanni.
Alla fine la sfogliatura con le pieghe va fatta come per l'originale, ma risulta meno difficoltosa perché non c'è il panetto di burro che cerca di fuoriuscire dall'impasto intorno a lui -creando un pasticcio. 
Ho usato la finta sfoglia per una specie di pizzette e secondo me è una via di mezzo tra la pasta sfoglia e la brisée, mi ricorda molto la pasta usata in America per il flatbread o la thin crust pizza. Croccante, unta ma non troppo, molto piacevole di sapore e con un po' di creatività si presta a svariatissime preparazioni. Insomma c'è da divertirsi. ;)



Ingredienti:

250 g farina
250 g formaggio spalmabile tipo philadelphia
160 g burro
2 pizzichi di sale

Mischiate tutti gli ingredienti con due coltelli o in un mixer funzione "Pulse" fino ad avere un composto bricioloso. Rovesciate le briciole cin un pezzo di pellicola e compattatelo in un rettangolo 25x35 cm alto 1 cm. Avvolgete bene in pellicola e lasciate riposare in frigo per qualche ora (1 notte, 24 ore ancora meglio). Io poche ore, 3 o 4.


1a piega: prendete il panetto, sistematelo su un piano infarinato e stendetelo col matterello in un rettangolo non troppo sottile, il più regolare che potete -l'obiettivo è mantenere gli angoli più che potete. Fate una piega a 3 piegando la parte in basso verso il centro e ripiegandoci sopra il terzo superiore. Mettete in frigo per 30 minuti avvolto in pellicola.


2a piega: Prendete il panetto, con il lato più corto verso di voi ristendetelo nuovamente col matterello e fate una seconda piega a 3. Riavvolgete in pellicola e rimettete in frigo per mezz'ora. Apparirà ancora piuttosto granuloso, ma col terzo giro si sistemerà.

3a piega: Ripetete come prima. A questo punto il panetto sarà liscio e pronto a essere utilizzato come volete. Se lo volete utilizzare subito stendetelo come vi aggrada, altrimenti arrotolatelo su un foglio di carta forno e poi pellicola, conservate in frigo e utilizzate nel giro di qualche giorno.





FAKE PUFF-PASTRY

Have you made puff-pastry at home? It's not exactly convenient, specially if, like in Italy, you can find it everywhere in the refrigerator section at any supermarket, round shaped and rolled, even in the 0 cholesterol version. In America you can find it frozen, in small squared sheets bent on themselves, which I hate because you have to roll them out and they easily break. So here I actually need to make my own. But when I see the amount of butter I need to make it, I don't feel so good. So this time I tried a different version which uses cream cheese instead of some of the butter. Again, it's not diet food, but not as heavy as the original. Besides, making puff pastry requires a long processing with precise steps and resting time, with the butter piece wrapped inside a flour and butter shell, which is difficult to roll out without the butter going out everywhere. Messy.

This fake puff-pastry recipe requires the same type of processing but it's easier because the butter and the cream cheese are already mixed up in the dough.
The result reminds me of a crossing between puff-pastry and the flatbread or thin crust pizza kind of dough. Very nice in flavour and very workable in multiple preparations. You just need to be creative ;)!

Notes: 

- I made the salted version because I needed it for a savoury dish. You can skip the salt and use unsalted butter and use for sweet preparations.

Ingredients:

250 g AP flour
250 g cream cheese like Philadelphia
160 g butter (unsalted)
2 pinches of salt

In a food processor with the 'Pulse' function, mix all the ingredients until crumbly.
Pour the crumbs mixture on a piece of wrapping plastic paper and compact it into a 25x35cm shape, 1cm tall. Wrap it well and leave in the fridge for 1 night or 24 hours (I left it less, 3 or 4 hours).

Take your dough, flour a working surface and roll it out into a long rectangular shape, trying to keep the corners as much as you can. It will still look crumbly, but that's ok. 

1st folding: take the lower third and fold it onto the center, then take the upper third and fold it over it (got it? Check here for a nice clear pic). Wrap it again and let it rest in the refrigerator for 30 minutes.

2nd folding: take your dough, short side towards you, and roll it again. Do as before, wrap and store for another 30 minutes. It'll still be crumbly, but as much as before.


3rd folding: you need to do this one more time, exactly like described above. If you kept pointed corners now you'll have a perfectly rectangular shaped dough. It won't be crumbly anymore and it's ready to use as you like! Roll it as you need or, if you don't want to use it right away, roll it around a piece of wax or parchment paper, store it in the fridge and use in a few days.
