Apricot Bread - Plumcake alle albicocche

Altra ricetta da uno dei libri della serie di Hannah Swensen di Joanne Fluke.
Non sono ancora riuscita a dare un giudizio sulle ricette perché devo provarne di più e l'uso immane del burro mi blocca spesso. Devo però ammettere che è difficile non provare tutto quello di cui si parla in questi libri perché ogni ricetta viene descritta come paradisiaca e fa venire 'na voglia!!!

Questo pane a me è piaciuto molto, meno al Professore a cui i plumcake piacciono lisci, senza uvetta o noci all'interno. Strano tipo, il Mister. Fatto sta che, checché dica lui, entrambi i plumcakes sono spariti nel giro di pochi giorni, il secondo plumcake, quello che avevo congelato, è misteriosamente scomparso in 23 ore. Ora, che io viva con due ragazzi va bene, e anche se il Professore dia la colpa all'altro per essersi fatto fuori metà plumcake in poche ore, in frigo c'era un contenitore ermetico con dentro il pranzo che il Professore si porta al lavoro, e dentro c'era una fettazza elle stesso plumcake che, a detta sua, non gli era piaciuto granché. E va beh.... Alla fine l'ho dovuto nascondere per poter assaggiare com'era quello che avevo congelato e dare una recensione!


Questo è un plumcake che non saprei ben classificare. Non è un tipico plumcake dolce, ma non è neanche salato. È meno umido di un banana bread, ma comunque molto soffice, non asciutto seppure corposo. Mangiato appena tiepido è delizioso a mio parere, non riuscivo a smettere, una volta raffreddatosi forse ci starebbe bene un po' di burro spalmato sopra? Magari salato.
Nella ricetta da dove l'ho preso faceva parte della selezione di pane servito al ristorante in un cestino, insieme ad altri tipi con noci e semi vari.
Note:

- questo plumcake congela che è una meraviglia! Basta avvolgerlo in pellicola e poi in un sacchetto per alimenti una volta raffreddato, metterlo in freezer, e lasciarlo scongelare a temperatura ambiente per qualche ora non appena se ne ha voglia! Resta sofficissimo e non perde assolutamente né in sapore né in morbidezza.

- potete aumentare di meza cup la quantità delle noci pecan. Il loro ruolo è importante nel sapore quindi è bello trovarne ad ogni morso. Insomma se vi piacciono potete aumentarne la dose senza aver paura che ce ne siano troppe!


Ingredienti (per 2 plumcakes):

170 g burro morbido
227 g formaggio cremoso tipo Philadelphia
390 g zucchero
2 uova
½ cucchiaino estratto di vaniglia
2 barattoli da 425 g l'uno di albicocche sciroppate*
524 g farina
½ cucchiaino bicarbonato di sodio
½ cucchiaino lievito
½ cucchiaino sale
120 g noci pecan, se potete tostate

*potete anche usare albicocche fresche, anzi approfittatene adesso che viene la stagione! Dovete solo sbollentarle perché le possiate pelate facilmente, oppure riducetele in purea con un tritatutto assicurandovi che non rimangano pezzi di buccia.


Sbattete burro, formaggio e zucchero fino a ottenere un composto bello cremoso e chiaro, a cui aggiungerete le uova leggermente sbattute. Continuate a sbattere per farlo diventare bello spumoso. Aggiungete la vanilla e poi il puré di albicocche.
In un'altra ciotola mischiate farina, sale, bicarbonato e lievito, e uniteli all'altro composto un po' per volta, lasciando che venga incorporato prima di fare un'altra aggiunta. Unite le noci pecan, date una bella mescolata a mano senza smontare il composto, e dividetelo equamente in due stampi da plumcake foderati di carta forno.


In forno caldo 180°C per circa 60 minuti (vale prova stecchino).

Se volete farne dei muffins, cuocete per 25 minuti a 190°C. Per mini-muffins, sempre 190°C per 15-20 minuti.




SALLY'S APRICOT BREAD


Right from one of the books of Joanne Fluke, this is a bread that was served at the Lake Eden Inn in a basket with other breads before the meal started. I'm not sure how to categorise this bread, it's not salted but not as sweet as a banana bread. It's right in between. I loved it still warm from the oven and those pecans are so yummy!!
Once it's cold you can warm it up and spread some salted butter on it. I'd probably say it's a brunch bread.
This recipe makes two loaves and you can freeze one of them. This bread freezes beautifully. Just wrap it in plastic film and then put it into a ziplock bag and in the freezer. Whenever you are ready for a second loaf, let it thaw for a few hours on the countertop, you will be as just made.


Ingredients (for 2 loaves):

1 ½ sticks of softened butter
8 ounces softened cream cheese (the brick kind, not the whipped kind)
2 cups white sugar
2 eggs, beaten
½ tsp vanilla
1 ½ cup mashed apricots*
3 cups flour (don't sift, pack it down in the cup when you measure)
½ tsp baking powder
½ tsp baking soda
½ tsp salt
1 cup chopped pecans (possibly toasted to enhance the flavour)**


*I used 2 15-ounces cans of canned apricots, pureed in a food processor; but you can also use fresh apricots, peeling them or making sure there are not chicks of skin after you pureed them. If you use canned apricots, you can used unpeeled if you puree them in a food processor.

** You can increase the amount of pecans to 1 ½ cups without a problem. They won't be too many.


Beat butter, cream cheese and sugar until fluffy and creamy, then add the eggs, beat well until it becomes light and super fluffy and then add the vanilla. Puree your apricots and add 1 ½ cups to the mixture. 
In another bowl mix the flour with the baking powder, soda and salt, then add it a little at a time to the batter, beating at low speed until everything is incorporated. Add the pecans and give it a stir by hand. 
Divide the batter into 2 loaf pans covered with parchment paper and bake at 350°F for 60 minutes (proof for doneness with a toothpick).


If you want to make apricot muffins instead, bake at 375°F for 25 minutes, 15-20 minutes for mini-muffins.

Let cool before removing from the pan and store in a ziplock bag.
