Biscotti al lime

Come anticipato, questi biscotti sono stati un tale successo che li ho voluti rifare, nel giro di pochi giorni, nella variante al lime. DOPPIO SUCCESSO!!!! Sono stati super graditi da tutti in famiglia, tanto che persino mia sorella, che in cucina non mette pedi se non per mangiare e che non troppo anni fa mi ha chiesto "Ma come si fa il caffè?" (!!!!) me ne ha chiesta la ricetta. E mia mamma ha già in programma esattamente cosa regalare a Natale, e questi sono uno dei prodotti.

Insomma, successo assicurato con sforzo minimo. La prossima sfornata sarà.... alle Clementine!!!!





Vi riscrivo la ricetta per comodità vostra: 

Ingredienti (per 24 biscotti):
120 g zucchero
100 g burro morbido
1 uovo
buccia di un lime
35 ml succo di lime
280 g farina
1 cucchiaino di lievito
1 pizzico di sale

zucchero semolato
zucchero a velo

Riducete a crema burro e zucchero, unite l'uovo, il pizzico di sale, mescolate e poi unite la buccia e il succo di lime. Unite infine la farina col lievito e impastate (se necessario, aggiungete un altro po' di farina) formando una palla. La palla deve essere molto morbida e un po' appiccicosa, ma dovete riuscire a darle una forma e quasi a pulire la ciotola. Se vi si attacca troppo alle dita, dovete aggiungere altra farina, ma poca per volta, solo quella necessaria. Mettete in frigo per un'ora.
Riprendete la palla e accendete il forno a 180°C.
Mettete dello zucchero semolato in un piatto, e in un altro un po' di zucchero a velo. Prendete dei pezzi di pasta, fatene delle palline grandi come noci, e passatele prima nello zucchero semolato e poi in quello a velo. Sistemate su una teglia coperta di carta forno e cuocete per 10-15 minuti.



LIME COOKIES

This recipe was such a success that, as I promised, I remade it using lime instead of lemon. Another big success! Everybody loved them and asked me for the recipe. They'll do great in a nice package under the Christmas tree.

Ingredients (for 24 cookies):

120 g granulated white sugar
100 g butter, soft
1 egg
zest of 1 lime
35 ml lime juice
280 g flour
1 tsp baking powder
a pinch of salt

granulated white sugar
powdered sugar

Beat butter and sugar until creamy, add the egg and the pinch of salt, the zest and the lemon juice. Add the flour with baking powder and mix everything together with your hands until you can shape the dough into a ball. It will be soft and quite sticky. You'll need a little more flour if it's too sticky (it always is), so add a little at a time until you manage to shape it.  Put in the refrigerator for an hour.
Heat the oven to 350°F. Take the dough from the fridge and tear off little amount, the size of a walnut. Shape them into balls and roll them first in the granulated white sugar, and then in the powdered sugar. If you managed to make all the cookies the same size, you'll get 24. otherwise they might be 22 or 26 smaller ones.


Place them on a baking sheet and bake for 10-15 minutes. Don't touch them until they've cooled down (they are still very soft when hot).
